If you want a different type of treat for the holidays, try this butterscotch brownies recipe. They’re not only delicious, but they also make great edible gifts for family or friends. These brownies are rich and buttery – which distinguishes itself from the chocolatey, fudgy type of traditional brownies. They are also called blondies in some parts of the U.S.
They also don’t take too time to bake – only 35 minutes, which already includes the prep time for your ingredients. You can also play around with the ingredients you have in your pantry. If you wish to add nuts, just toast 1 cup and add them on top right before baking.
(Makes 16 squares)
Ingredients
- 1/2 cup butter
- 1 cup muscovado sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1/8 teaspoon salt
- 1/2 teaspoon baking powder
- 1/8 teaspoon baking soda
Procedure
- Preheat oven to 350°F. Lightly grease an 8×8-inch square baking pan. Line with parchment paper. Set aside.
- Place butter and muscovado sugar in a microwave-safe bowl. Microwave on high for 1 minute, or until butter is melted. Remove from the microwave, and stir to mix sugar and butter.
- Break egg into the bowl, and blend together with a spatula. Stir in vanilla extract.
- Dump in flour, salt, baking powder, and finally, baking soda. Stir until just mixed.
- Pour into the baking pan greased with oil, and bake for 20 minutes or until edges are firm and middle is soft but bounces back when lightly pressed. Do not overbake. Remove from oven, and cool on a rack for about 10 minutes before slicing into squares and serving.
